Vinification is traditional and temperature-controlled using native yeasts. Only fully-mature grapes go into the vinification process.
We systematically seek to restrict the use of additives to a minimum during vinification. The combination of human expertise, the terroir, the weather and a carefully-considered work method produces wines of considerable class and finesse. The same discipline and techniques are used for the easy-drinking freshness of Sylvaner as for the rich opulence of the Sélection de Grains Nobles.
